The FSSAI rapid screening report cites exceedance of the prescribed organophosphate MRL of 0.05 mg/kg, a threshold established under the Food Safety and Standards (Contaminants, Toxins and Residues) Regulations 2011. The consignment, originating from a Gujarat-based APMC mandi, bears a QR code that, when scanned, resolves to a cryptographic batch record on the Polygon network. Within seconds, the customs officer verifies the hash, the associated lab certificate from a NABL-accredited facility, and the farmer geo-coordinate provenance. The lot is released. This scenario is no longer exceptional; it is the operational baseline for D2C brands that have integrated end-to-end traceability into their packaging and compliance architecture.

Statutory Thresholds and Analytical Realities

The FSSAI 2011 contaminants regime sets maximum residue limits (MRLs) across commodity classes. For poultry, the chlorpyrifos MRL is 0.01 mg/kg; for wheat flour, the combined pyrethroid limit is 0.03 mg/kg. The European Commission Regulation (EU) 2023/915 further tightens these ceilings for imported goods, often aligning with Codex Alimentarius STAN 193-1995 for spices. Aflatoxin B1 in dried chilies must not exceed 10 µg/kg; Aflatoxin M1 in milk is capped at 0.05 µg/kg. These are not advisory benchmarks; they are enforceable limits at point of entry.

Analytical confirmation rests on a calibrated instrumentation cascade. Multi-residue pesticide sweeps are executed via LC-MS/MS (Liquid Chromatography-Tandem Mass Spectrometry) operating in negative electrospray ionization mode, achieving limits of detection below 0.001 mg/kg. Organophosphate and pyrethroid quantification employs GC-MS/MS (Gas Chromatography-Tandem Mass Spectrometry) with split/splitless injection and isotopic internal standards. Heavy metal screening—lead, cadmium, arsenic—is performed on an ICP-MS (Inductively Coupled Plasma Mass Spectrometry) platform, capable of ppb-level quantification. Honey adulteration, specifically C3/C4 syrup admixture, is detected by NMR (Nuclear Magnetic Resonance) spectroscopy, which profiles the fructose-glucose ratio and marker peaks indicative of botanical origin. Aflatoxin B1 and M1 in nut and dairy matrices are quantified using HPTLC (High-Performance Thin-Layer Chromatography) with densitometric scanning, or ELISA kits validated against FSSAI reference methods. Each analytical result generates a digital hash—keccak256—that is anchored to a batch record on-chain, creating an immutable audit link between lab data and consumer-facing packaging.
